Today’s Recipe: Pomegranate Pear Salad

This weekend I was given a huge bag of pears right off a family friend’s pear tree!  What a treat:)  I decided to make this delicious pomegranate pear salad and wanted to share the recipe with you because it is so refreshing and healthy.  Enjoy!
Pomegranate-Pear Salad
3 pears – peeled, cored and cut into wedges
1 pomegranate, skin and membrane removed
1 tablespoon fresh lemon juice
2 tablespoons light brown sugar
1/4 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 tablespoons finely chopped almonds (optional)
4 sprigs fresh mint leaves for garnish (optional)
Directions:
Place the sliced pears and pomegranate seeds into a bowl. Toss with lemon juice to coat. Combine the brown sugar, nutmeg, and cinnamon in a small cup or bowl, then mix into the fruit. Cover and refrigerate for at least 1 hour before serving to blend the flavors. This is even better if it has a couple hours to sit before you eat it!
Tip: Helpful tip for peeling a pomegranate — score the skin of the fruit and submerge in a bowl of cool water. Peel underwater – the seeds will fall to the bottom, the peel and that papery membrane stuff will float to the top and can be skimmed off. 
Food for Thought: Pomegranates are full of antioxidants, fiber and potassium.  Pears are also loaded with fiber, potassium and vitamin C.  Both fight cancer, keep your heart healthy and aid/improve digestion.  Make sure you are eating the skin of the PEAR (not pomegranate) since many of the nutrients are found in the skin.
