Today’s Recipe: Cucumber & Avocado Salad

Need an easy recipe for a refreshing appetizer salad?  Here you go!  Healthy of course too!!

2 ripe avocados cut into chunks
4 vine ripe tomatoes cut into chunks
2 medium cucumbers peeled and cut into chunks
1/2 cup green onions chopped
1/4 cup of fresh dill chopped
1/2 tsp sea salt
1/4 cup fresh lime juice

Mix all together. The lime juice with the avocado will create a wonderful dressing on the salad because the fat in the avocado will add to the flavor of the lime juice.  Serves 4-6.

Food for Thought:  One medium-sized avocado has about 30 grams of fat.  However, most of the fat is the good fat (monounsaturated) and actually lowers your cholesterol, which helps lower your risk of heart disease.  Don’t be fooled by avocado’s bad rap as a high-fat food.  Just like other high-fat plant foods (olive oil, walnuts, almonds, flaxseeds, etc.), avocado can provide us with many health benefits because of its unique fat composition.

Moral of the story…Eat More Avocado!!
