Today’s Recipe: Roasted Pumpkin Seeds

1 cup fresh pumpkin seeds
2 tsp olive oil
1/4 tsp sea salt

1. Preheat oven to 350 degrees

2. Rinse seeds and pat dry
3. Cover baking sheet with dusting of olive oil
4. Spread seeds in a single layer on baking sheet
5. Sprinkle salt over seeds
6. Bake 20-25 minutes or until toasted
7. Enjoy!

I was inspired to share this recipe with you after enjoying a little pumpkin carving party the other night!  See pictures below:)  Before creating our works of art, we scooped out all the seeds, rinsed and baked the seeds as directed in the recipe above.  The seeds turned out great and so did our pumpkins!

Food for Thought:  Also known as “pepitas,” pumpkin seeds are a good source of many vitamins/minerals and have several health benefits.  They are high in zinc which helps prevent osteoporosis.  In addition, they are a natural anti-inflammatory and help lower your cholesterol.  Next time you scoop out the inside of the pumpkin, make sure you save the seeds…they are not only a healthy snack, but they taste great too!
