Today’s Recipe: Kale Chips

I found this recipe on Tenley Molzahn’s (from Bachelor and Bachelor Pad) Facebook page.  Yes, I am admitting I follow her on Facebook… she is gluten free and posts lots of unique, healthy recipes.  This is one of them!  I made these kale chips this past weekend for a party and I must say they taste great, actually they’re addictive!  Here’s how to prepare them-just make sure to bake right before serving, otherwise they won’t stay crispy.

-Preheat oven to 350 degrees
-Rinse kale and dry well
-Pull kale leaves off of stem and then pull apart into chip sizes
-Put kale in a large bowl and massage with just a bit of olive oil and sea salt
-Spread the kale out on a baking sheet
-Place baking sheet in oven for about 10-15 minutes

Food for Thought:  Eat these instead of potato chips and you will be getting a healthy dose of vitamins A, C and K.  Kale is also loaded with beta-carotene and lutein.  It is a form of wild cabbage with a mild cabbage flavor.  Topping the kale with a little olive oil and sea salt makes it a wonderful substitute for full-of-fat, fried potato chips.  Helpful hint: Trader Joe’s sells a bag of cut, cleaned and ready to cook kale. I used the entire bag and it saved me quite a bit of time!  Enjoy:)
