Today’s Recipe: Taboule Salad

Look what’s cooking in the japple kitchen!! You will love this tasty salad, full of healthy veges and lots of protein!

-Mix 1/2 cup boiling water with 1 1/4 cup dry whole wheat couscous. 
-Add 6 Tbsp olive oil and 1/3 cup lemon juice.  Stir well. 
-Cover and let sit for 5 minutes.  Fluff with fork. 
-Add 1 diced tomato, 1/2 diced green or red pepper, 1/2 chopped onion and 4 Tbsp parsley.
-Salt and pepper to your taste. 
-Toss lightly.
-Refrigerate for 15 minutes. 
-Fluff with a fork and serve. 
(Serves 5)

Food for Thought:  Couscous is often thought to be a grain, but it is actually a small pasta made from semolina wheat.  It is an excellent source of protein, fiber, potassium, niacin, selenium and vitamin B.  Couscous is very versatile-it is delicious both hot or cold.  It can be enjoyed as a side dish or in salads like this yummy one!
