Today’s Recipe: Quinoa Salad

Here is a delicious recipe for Quinoa Salad that I sampled at Trader Joe’s the other day.  It is healthy, tasty and full of protein!  You will love this…

Ingredients:
-1 Cup Quinoa
-1/2 to 1 Red Onion
-1 Red, Orange or Yellow Pepper
-2 Cups Organic Low Sodium Vegetable Broth
-1 1/2 Cups Orange Flavor Cranberries

Directions:
-Rinse Quinoa in cold water
-Put in pot with vegetable broth and simmer until all the broth is absorbed (about 20 minutes)
-Saute vegetables in olive oil
-Add vegetables to Quinoa and season to taste
-Add Orange Cranberries, stir and serve (makes about 4 servings)
-Enjoy!

Food for Thought:  Quinoa (pronounced KEEN-wah) is a highly nutritious gluten- free seed originally from South America.  It has a mild, nutty flavor that makes it a great substitute for brown rice or couscous.  Quinoa is an exceptional source of protein, containing all eight essential amino acids.  It is also a good source of fiber, B Vitamins and iron.  Quinoa is very versatile and easy to prepare, as you can see in this recipe.  You can also use quinoa in breakfast cereals, soups, salads, chili, etc.  One key is to make sure you rinse the quinoa before cooking it to remove any bitter aftertaste.  You will know the quinoa is finished cooking when white spiral-like threads appear around each grain.
