Healthy Summer BBQ Ideas

It’s that time of year! SUMMER!! We all have cookouts and parties scheduled the next couple months. 4th of July is almost here!  What does that mean for your health and fitness goals? It just means being more proactive, planning ahead and making healthier choices. Here’s 2 healthy ideas I’ll be sharing on the news. I made both and they are amazing! Enjoy 🙂

Watermelon Passionfruit Mojito Mocktailwatermelon

  • 3 cups chopped watermelon
  • Juice of 2 limes
  • 1 can Passionfruit La Croix
  • Mint leaves
  • Ice

In a blender, blend watermelon and lime juice. In the bottom of each glass, muddle 2 mint leaves. Add in watermelon puree, filling about 1/2 full. Add ice and top with the passionfruit La Croix. Stir to combine. Garnish with mint sprig and watermelon slice if desired.

*Makes 2-3 drinks

**This drink has around 50 calories vs. the 200+ calories in a typical alcoholic mojito

Roasted Veggie Salad

Followveggies this link for all the details and instructions.  I did cut the olive oil in half for both the roasted veggies and for the avocado lime dressing. You could use any variety of veggies and grill them instead. I added tofu, but chicken or shrimp would also be great for added protein!
