Back To School Healthy Tips & Treats

August 29, 2017

Back to school means back to routines and making sure kids and adults are fueled to keep up with all our activities. Do your kids come home from school asking for a snack {which to them means something sweet}??

Good news, here’s a few ideas to help you start creating a menu of healthy snacks and treats:

  • Frozen Grapes
  • Homemade Popsicles
  • Fresh Fruit with Peanut Butter/Almond Butter
  • Chocolate Banana “Cookies”

My favorite option that I recently whipped up with ALL 3 ingredients;) are the Chocolate Banana Cookies. They are actually delicious. Check out the details here:

Makes 10-15 cookies

INGREDIENTS:

  • 2 very ripe bananas
  • 1 cup of oats
  • 2 large tbsp of unsweetened cacao powder

*Can mix in chopped nuts, raisins, coconut flakes, flax seed, vanilla, dried fruit, etc.

DIRECTIONS:

  1. Preheat oven to 350 degrees and cover baking sheet with non-stick spray.
  2. Mash 2 ripe bananas in a bowl and then mix in 2 large tbsp of unsweetened cocoa powder and 1 cup of quick oats until a cookie dough-like batter is formed. Depending on the size of bananas, start with 3/4 cup of oats and add more as needed. The mixture will seem very dry at first, but after a few minutes of mixing it will turn into a good consistency.
  3. Place balls of your cookie dough mixture evenly on your baking sheet. Flatten and mold them to form “cookie” shapes (they will not flatten or change shape with baking).
  4. Bake at 350 degrees for 10-15 minutes.
  5. Enjoy these yummy treats! Like most cookies, these are best when served warm and fresh, right out of the oven. You can also store them in a container or ziplock bag to enjoy later.
